The ultimate cheeseburger made with two grilled cheese sandwiches for the bun. Top with your favorites and enjoy!
Swordfish in Parmesan Bowl with Mango Salsa
Grilled swordfish placed in a parmesan bowl and topped with a mango salsa.
2 cups diced mango
½ cup minced red bell pepper
4 Tbsp sliced green onions
4 Tbsp minced poblano pepper
1 lime, juice and zest
2 Tbsp red wine vinegar
6 Tbsp low-sugar orange marmalade
¼ tsp chili powder
Combine the mango peppers and onions in a bowl. In a separate bowl mix the lime juice and zest, red wine vinegar, marmalade and chili powder, then pour over the mango mixture. Mix it all together evenly. Refrigerate until ready to serve. Can be made the day before.
Asparagus is coated in quality olive oil and dusted lightly with sea salt then grilled.
